The Eight Islands White Caribbean Rum is a blend of rums from eight different Caribbean islands.It is matured in Irish whiskey casks, in Cork, Ireland.

This rum is produced by West Cork Distillers.

Tasting notes:

Color: Clear.

Nose: sweet, fruity, slightly spicy, oak, vanilla.

Taste: Soft, sweet, slightly bitter, vanilla, citrus aromas.

Finish: Long lasting, spicy, vanilla.

Describing itself as 'the rum for bourbon drinkers. Bayou Select is copper pot distilled from Louisiana sugarcane and then aged in the Solera method for up to three years. The result is a creamy rum with a bourbon-esque character, accompanied by notes of cinnamon and maple. The Solera method involves a pyramid of stacked barrels. The oldest liquid is in the bottom layer of barrels, the youngest in the top. When a batch is harvested it is filled solely from some of the bottom layer, and those barrels are then topped up with rum from the layer resting on top of them. This second layer is, in turn, topped up with the contents of the third layer, and so on. This process is a way of naturally blending spirits for consistent taste and quality.

This is a dark rum (and a fairly dusky one at that. Aged up to eight years, it’s got some coffee, cinnamon, and cloves on the nose — along with some raisin notes. Quite savory on the tongue — those bitching about Exclusiva being too sweet can check this out — the coffee notes filter down to dusky charcoal, barrel char, some raisin, and a bit of dark chocolate. Sugar is almost an afterthought here. If you like your rum chewy and filtered through the dank haze of wood, this is your jam. For me though, it’s a bit one-note. 80 proof
