San Cosme Joven Mezcal – 70 cl

San Cosme Mezcal is a spirit made from the espadín agave plant, produced in the state of Oaxaca, Mexico. The production process is an art: During harvesting, the agave leaves are separated from the center of the plant. The agave hearts are then cooked underground in the traditional way, in pits that serve as ovens. This is where the aromas of the soil and smoke are absorbed, giving the mezcal its characteristic flavor.
The cooked agave is then ground using a stone mill, usually pulled by a horse or ox. Spontaneous fermentation occurs in open wooden barrels. Distillation is carried out in a copper still, a copper pot, over an open fire.

Aroma: Smoky with traces of caramel, wood and earth.
Taste: Pleasantly smoky and warm with a mixture of smoked agave and leather.
