• Cooking: The agave piñas are split and slow-cooked for 4-6 days in earthen pits lined with volcanic rocks, which imparts the signature smoky flavor.
• Crushing: After cooling, the agave is crushed using a traditional horse-drawn stone tahona wheel.
• Fermentation & Distillation: The mixture ferments for 6-8 days before being double-distilled in copper pot stills.
• Proof: The final spirit is bottled at 80 proof (40% alcohol by volume). 

• Aroma: The aroma is described by the producer as fragrant herbal and fruit, with hints of smoke. Reviewers note a prominent smokiness, sometimes described as medicinal or like gasoline.
• Flavor: The producer notes include hints of tamarind, pomegranate, banana, and mango, balanced with fresh mint, dried oregano, smoke, and black pepper.
