• Origin: Islay, Scotland (Distillery founded in 1846).
• Distillery Role: Caol Ila is the largest distillery on Islay by output. Beyond its standalone single malts, it serves as a critical, smoky backbone component for famous Diageo blends, most notably Johnnie Walker.
• Maturation: Aged for 12 years primarily in refill ex-bourbon casks.
• Visual Profile: A distinct, bright pale straw color.

• Nose: Fresh and appetizing with notes of citrus, green apple, a touch of peppermint, sea salt, and a soft, wafty coastal breeze. Smoke is present but subdued.
• Palate: Smooth, medium-weight, and slightly oily mouthfeel. It opens with a creamy sweetness consisting of vanilla, honey, toffee, and poached peaches, which transitions into an ashy, campfire smoke balanced by a touch of peppery spice and brine.
• Finish: Clean, lingering, and lengthy. It leaves a warm aftertaste of sweet wood smoke, salty ash, and a faint hint of aniseed.

• Serving: Best enjoyed neat in a rocks or Glencairn glass. Adding a splash of room-temperature water or a small piece of ice opens up the sweeter fruit notes and mellows the ashiness. It also performs exceptionally well in a smoky Highball cocktail. 
• Pairing: Its savory, briny qualities mean it pairs beautifully with salty foods, charcuterie, smoked hams, or rich, flavorful meat dishes.

The Macallan Double Cask 15 Years Old is a well-balanced single malt whisky made by combining the ideal harmony of two oak casks into a single superb whisky. Sherry-seasoned American wood adds faint vanilla to the modest spice of European oak, resulting in a whisky with a sweeter, warmer flavour and character.Within one superb single malt whisky, two unique oaks produce the perfect equilibrium of flavours. The Double Cask whiskies are aged in two different content-types of oak, in hand-crafted casks that have been seasoned with dry Oloroso sherry. Vanilla, citrus, and butterscotch flavours are imparted by American oak.

The Macallan's unmistakable delicate spice comes from European oak. These two superb whiskies combine after 15 years to create a distinct single malt with a sweeter, warmer flavour and character.

Tasting Notes: On the nose, butterscotch and plump raisin, with spiced apple crumble and oak spice.

On the palate, dried fruits galore, with a dusting of cinnamon, candied ginger and orange peel. More warming ginger alongside a drizzle of honey and buttery caramel on the finish.

The Macallan treated this 18 Year Old to not just one, but two cask content-types for its maturation, released as part of the Double Cask series! Oloroso sherry was used to season a combination of both American and European oak casks, with the former imparting vanilla nuances while the latter brings that hallmark Macallan spice. Another fantastic sherried single malt from the Speyside distillery!

Tasting Notes

Nose: Dried fruit, ginger and toffee. Rich orange with hints of clove and nutmeg.

Palate: Rich raisin and sultana with notes of caramel, vanilla and ginger, balanced by wood spice and zesty citrus.

Finish: Warm oak spice with ginger, turning to sweet orange.
