A premium version of Jack Daniel's, each of these comes from a single barrel, specially selected by the master distiller. These are chosen for their suitability as standalone spirits, resulting in a whiskey full of richness and complexity.

Nose: Good body with plenty of toasty oak, there are notes of corn and lovely cereal sweetness, there is a good smoke note, a little spice and toffee.

Palate: Full and mouth-filling. There are notes of cereal sweetness, the rye is in evidence with a touch of cigar box and nut oils, a little spice and an aniseed character.

Finish: Good length with a hint of citrus and plenty of cereal sweetness.

Made from the finest corn, rye, and barley malt these choice grains are mixed with the iron-free water that flows from the Cave Spring found on the distillery grounds. Spiced Bayou Rum is infused with classic traditional spices with a Louisiana twist. Featuring Louisiana grown ingredients, this special gumbo of spices creates a unique and satisfying blend that makes it the perfect rum for mixing. Describing itself as 'the rum for bourbon drinkers. Bayou Select is copper pot distilled from Louisiana sugarcane and then aged in the Solera method for up to three years. The result is a creamy rum with a bourbon-esque character, accompanied by notes of cinnamon and maple. The Solera method involves a pyramid of stacked barrels. The oldest liquid is in the bottom layer of barrels, the youngest in the top. When a batch is harvested it is filled solely from some of the bottom layer, and those barrels are then topped up with rum from the layer resting on top of them. This second layer is, in turn, topped up with the contents of the third layer, and so on. This process is a way of naturally blending spirits for consistent taste and quality.

Kentucky Owl Confiscated is a tribute to the barrels the government seized from the founder's great-great grandfather ahead of Prohibition, never to be seen again. This hotly-anticipated whiskey is a spice-driven expression, so it ought to be great as a postprandial tipple on a chilly evening, we reckon.

Tasting Notes

Notes of gardenia, banana bread, toasty sourdough bread crust, and red apple on the nose. The taste is of graham crackers, citrus, toffee, and muted sweet cinnamon spice, balanced with white grape notes, and a hint of cayenne on the finish.
