Kaiyo Whisky is very intriguing indeed, starting out as a teaspooned malt (with the bulk of the malt whisky coming from one distillery, along with a drop of malt whisky from another distillery, meaning it can’t be called a single malt). Kaiyō whisky is matured in the finest Japanese Mizunara oak casks. These casks are handmade due to Mizunara oak’s delicate wood grain. They are among the rarest casks in the world and are considered the finest in which to mature whisky. Not only that, it spends a portion of its maturation at sea, helping to evolve its flavour profile further.

Tasting Notes

On the nose, orange peel, jasmine, a hint of coastal air, soft cedar. Coffee bean, green apple, black tea and alpine herbs on the palate. With cinnamon rolls and mango finish.

The Macallan treated this 18 Year Old to not just one, but two cask content-types for its maturation, released as part of the Double Cask series! Oloroso sherry was used to season a combination of both American and European oak casks, with the former imparting vanilla nuances while the latter brings that hallmark Macallan spice. Another fantastic sherried single malt from the Speyside distillery!

Tasting Notes

Nose: Dried fruit, ginger and toffee. Rich orange with hints of clove and nutmeg.

Palate: Rich raisin and sultana with notes of caramel, vanilla and ginger, balanced by wood spice and zesty citrus.

Finish: Warm oak spice with ginger, turning to sweet orange.

Made from the finest corn, rye, and barley malt these choice grains are mixed with the iron-free water that flows from the Cave Spring found on the distillery grounds. From there Jack Daniel's is charcoal mellowed drop by drop through 10 feet of sugar maple charcoal which imparts our distinct smoothness. Finally, Jack Daniel's is matured in handcrafted white oak barrels of our own making.

The initial aroma is strong with citrus and a hint of whiskey. The palate again reveals lots of orange character, and a moderate amount of honey. Has a rich, bourbon finish that plays on the tongue and ends with a final touch of honey.
