Alipús San Juan is a highly regarded, artisanal Espadín mezcal produced in the village of San Juan del Río in Oaxaca, Mexico. It is part of the Alipús collective brand created by Destilería Los Danzantes, which focuses on highlighting the unique terroirs and traditional methods of individual family distilleries (palenques). The San Juan expression is the “longest-serving” family bottling under the Alipús label, initially crafted by Don Joel Antonio Cruz and now continued by his family and cousin, Rodolfo Juan Juárez.

Flavor Profile

Aroma: Features prominent notes of light coconut, charred pineapple, burnt orange peel, and traditional wood smoke.
Palate: Fruity and robust with a core of tropical fruit (banana), a rich cinnamon sizzle, and deep herbal, citrus, and mineral aromatics.
Texture & Finish: Balanced and crisp with a fresh acidity, a distinctly chalky, mineral texture, and a long, lingering finish.
Alcohol by Volume (ABV): 47.5%

Production Process

The family creates this mezcal using ancestral methods that pass through generations:

The Agave: Crafted from 100% Agave angustifolia (Maguey Espadín) grown in iron-rich, mountain-top red and white soils at altitudes up to 1,700 meters.
Cooking: The agave hearts (piñas) are slowly roasted in a conical, underground stone oven fueled by local oak wood to impart smoke.
Crushing & Fermentation: The cooked agave is crushed using a traditional stone mill (tahona) pulled by a draft animal, then undergoes an extended natural fermentation with wild yeasts in open-topped oak vats.
Distillation: The mash is double-distilled in traditional, direct-fire copper pot stills.
