Alipús San Miguel is a highly regarded, artisanal mezcal produced in the remote village of San Miguel Sola de Vega, Oaxaca, Mexico. It stands out in the Alipús lineup because it is an ancestral ensamble distilled entirely in traditional clay pot stills (destilado en barro), rather than standard copper stills.

Production & Craftsmanship

The Agave Blend: It is typically crafted from an 80/20 blend of cultivated Espadín and semi-wild, slow-growing Arroqueño agaves (Agave americana). The plants are harvested at high altitudes in steep, iron-rich soils.
Ancestral Methods: The agave hearts are wood-roasted in stone-lined earth pits, crushed entirely by hand using wooden mallets in a trough (canoa), and fermented with native yeasts in oak or pine vats.
The Maestros: Production is limited to tiny, hand-numbered batches crafted by local independent palenqueros (master distillers), lovingly referred to on the bottle labels as Tío Jesús (Jesús Ríos), Tío Félix (Félix García), and Tío Leonardo (Leonardo Rojas).
