The wine was left on the lees for 80 days to add complexity. Twenty percent of the wine was matured on French oak for 6 months. The balance of the fresh citrus fruits and rich melon characters give the wine a full rounded palate that combines well with the subtle creaminess and nuttiness of the gentle oak. The natural acidity follows through to a fresh and clean finish.

Tasting Notes: Elegant and refreshing with aromas of grapefruit, lime and guava. The palate is soft, fleshy and juicy with hints of asparagus and a chalky minerality. The wine is balanced and has a seamless finish.

The base wine is put into pressurized tanks for the prise de mousse; it ferments in these for 18 - 20 days, with the aid of selected yeasts, at controlled temperatures of between 14 and 16. Once the desired pressure has been obtained (around 6 bar) the wine is chilled to -4 in order to block the fermentation and encourage stabilization. It is then kept at a controlled temperature for at least one month, so as to favor its natural maturation in contact with the lees. At the end of this process, it is filtered and undergoes isobaric bottling.

This bright, salmon-pink wine shows upfront fruit aromas of strawberries, rose petals and candy floss, with hints of violets, Turkish delight and raspberries. The palate is elegant and fresh with an ester character and soft acidity that leads to a creamy finish and touch of residual sweetness.This wine can be enjoyed at any occasion, on its own or with meat casseroles, pasta dishes with a tomato-based sauce, stews and meaty pizzas.
