The base wine is put into pressurized tanks for the prise de mousse; it ferments in these for 18 – 20 days, with the aid of selected yeasts, at controlled temperatures of between 14 and 16. Once the desired pressure has been obtained (around 6 bar) the wine is chilled to -4 in order to block the fermentation and encourage stabilization. It is then kept at a controlled temperature for at least one month, so as to favor its natural maturation in contact with the lees. At the end of this process, it is filtered and undergoes isobaric bottling.

The base wine is put into pressurized tanks for the prise de mousse; it ferments in these for 18 - 20 days, with the aid of selected yeasts, at controlled temperatures of between 14 and 16. Once the desired pressure has been obtained (around 6 bar) the wine is chilled to -4 in order to block the fermentation and encourage stabilization. With its bright straw yellow color, with slightly fruity and persistent notes, Chardonnay delle Venezie is a wine with a harmonious and balanced flavor. It is only made from Chardonnay grapes selected from the finest vineyards in the Triveneto area.

The grapes: 50% corvina; 30% rondinella; 10% molinara; 10% merlot from favoured sites in the Classico DOC zone, on the Veronese shore of Lake Garda.

The vinification: the grapes are picked when perfectly ripe; 70% is vinified by the rosé wine method with contact of the skins with the must for about 24 hours and the remainder by the white wine method without skin contact. Lamberti Valpolicella is a dry red blend of Corvina, Molinara, Rondinella and Merlot grapes from the hills of the Classic D.O.C. zone near Verona. Matured for three months in Slovenian oak, it is medium bodied and dry, with a bright cherry-stone finish.

Villa Antinori Bianco is a white that comes from the union of several grape varieties in harmony with each other, coming exclusively from the owned vineyards, which maintains the spirit and principles that characterize the production style of the Antinori house.

It is produced with Trebbiano, Malvasia, Pinot Bianco, Pinot Grigio and a small part of Riesling Renano, whose harvest takes place entirely by hand in the third decade of August. After a very soft pressing of the grapes, the must is transferred to steel where fermentation starts at a temperature that does not exceed 18 ° C.

The wine then ages in stainless steel tanks in order to preserve its freshness and aromatic composition. It is characterized by a straw yellow color with greenish reflections. The perfume is fine and elegant, with fruity notes of banana and pineapple alternating with hints of white flowers. In the mouth it shows a balanced wine, pleasantly persistent and mineral. Ideal in the company of light fish dishes, it is excellent to combine with steamed vegetables.
