Gin Mare stands out for its use of regional ingredients that evoke the essence of the Mediterranean, moving beyond the standard juniper-forward gin profile to offer something unique.

Botanicals: The core ingredients include Arbequina olives from Spain, basil from Italy, rosemary from Greece, and thyme from Turkey. These are complemented by traditional gin botanicals such as juniper berries, coriander, and green cardamom, as well as bitter oranges and lemons from Spain.

Production: Each botanical undergoes a delicate maceration and independent distillation process in ancient Florentine stills to ensure its unique character is fully expressed, with the citrus fruits macerated for over a year. The varying acidity of the Arbequina olives means each batch has a slightly unique profile, adding to its artisanal appeal.

It's a masterpiece of collaboration between four masters of their craft: a chef, a sommelier, a mixologist and a master parfumeur. It's made batch by batch using the best of traditional spirit distillation alongside the revolutionary use of a Rotaval, a low-temperature distillation machine developed by one of the leading restaurants of molecular gastronomy in Spain. Bonanto is a wine-based aperitif with 22% Vol. Alc. 70 cl., and a selection of 30 botanical, among which the wormwood and Mediterranean aromatic plants such as laurel, rosemary, basil and thyme. Together with a selection of citrus fruits and the distillate of cherry and apple, they give this creation a unique personality. Red in color, it is a light, fresh drink with a touch of bitterness.

Marqués de Riscal made Rioja what it is today. Up until the 1850s the locals had made only light, young wines. Then, in 1858, Riscal introduced the ‘Bordeaux method’, barrel ageing. From that moment on, the practice became integral to Rioja. Today, Riscal Reserva is one of the most famous wines in Spain. Each grape is selected from vines that are at least 50 years old. Mature vines make the tastiest grapes. So the wine is incredibly rich and concentrated.

It’s full of summer-berry flavours and notes of liquorice and vanilla spice.

Parellada and Garnacha Blancatraditional white grapes, are what give Viña Sol its distinctive fresh fruitiness. Intense, with outstanding notes of flowers and ripe fruits (banana, pear, apple and peach), combined with delightful touches of citrus (mandarin zest) on a mentholated base. It’s firm, fresh, long and elegant in the body, with a lingering finish.

Excellent as an aperitif and acompaniment for rice dishes, seafood and fish.
