Although London's Gin Palaces are no longer in existence, Hayman's has kept this Victorian tradition alive by resting its classic London Dry for three weeks in ex-Scotch whisky barrels, allowing the spicy and peppery notes to emerge while keeping the delicate traditional notes of the botanicals intact.
