A new range launched in Spring 2020, the Cask Collection illustrates the creativity of the West Cork distillery. Produced in small batches, these Single Malts made from 100% Irish malted barley are triple distilled and then aged in first-fill bourbon casks. Each is then matured in a spirits or fortified wine cask for several months and therefore has a unique character and a 100% natural colour. For each Single Malt, the House from which the casks originate is specified in the greatest transparency on the label. For this Sherry Cask Finished, the influence of the Bodega Baron Sherry casks is very clear, with a spicy Single Malt enhanced with notes of dried and candied fruits.

NOSE	The sherry finish results in aromas of dried prunes and fig with sweet candy and vanilla notes.
PALATE	Sweet at the beginning switching to a dry finish with some spice and pepper present.
FINISH	A short to medium dry finish, initially sweet but ending with black pepper and spice.
